Update notebooks for lsdb v0.8 `crossmatch()` changes

lsdb v0.8 will be released soon. The crossmatch() function will include a breaking change. The default suffix behavior will change from applying suffixes to all columns to only applying suffixes to overlapping columns. The following notebooks use that function:

Several column names will need to be changed.

OK, but with these the notebooks will be either lsdb>=0.8 compatible, or lsdb<0.8, right? Or would you propose to maintain both? (normally with libraries we do the latter, but I'm not certain what would make sense for the notebooks. I don't really like forcing them needing to have latest and greatest of any of the packages, especially once we already shipped them with some more forgiving requirements).

Also, just to be on the safe side, shall we upper pin lsdb for now?

The notebook will have to check the lsdb version in order to support both >= and < v0.8, which is unfortunate but I suppose it's better to be more flexible. Especially since lsdb tends to have such strict and narrow dependencies.

Yes, good point about upper-pinning lsdb for now.
