docs: remove Human Relay provider documentation

Removes the Human Relay provider documentation as the feature has been removed from the extension.

Changes

• Deleted docs/providers/human-relay.md documentation file
• Removed Human Relay entry from docs/providers/index.json
• Added redirect from /providers/human-relay to /providers/anthropic in docusaurus.config.ts

Context

The Human Relay provider was removed in the extension, so this PR removes the corresponding documentation to keep it in sync.
